One of the food ministries of Lutheran Campus Ministry (LuMin) at UT Austin is Tailgate Tuesday. The last Tailgate Tuesday for this semester was April 28 and hosted by TLLC. Hosting means we provide the funds to purchase the food and supplies for the meal and workers to make it happen along with some UT students.

This being the last Tailgate Tuesday, the menu was pancakes and sausage. At 3:00 pm, TLLC volunteers began to arrive and began the meal preparation: separating the eggs, weighing and measuring the dry ingredients, setting up the grills, and gathering up the plates and utensils. Everything was in place by a little after 4:00 pm so the group got to rest in the student lounge. After having an opportunity to talk and have fun with the students, Pastor Brad made the final assignments to begin the meal.

Those working outside cooked the sausages and those in the kitchen began to mix the dry and wet ingredients. The grills were cleaned and seasoned before pancakes were started on the grills (four of them) a little before 5:00 pm when students began to be served. It was a constant stream of students until 7:00 pm when the food service ended. About 400 students were served and all of the food prepared was gone. The refrigerator and freezer were emptied. Fresh food and staples from the food pantry were also distributed. Everything was cleaned and packed away a little after 7:00 pm. Pastor Brad noted it was an awesome night and what a way to end this year’s Tailgate Tuesdays!

Thank you to members who gave the funds to support the meal and to Bianca, Maria, Tom, Erin, Rick, Karen, and Carl who provided the in-person support. If you’d like to be a part of the Tailgate Tuesday Volunteer crew let us know!
